It seems like it has been forever since my last blog post and I have missed being able to sit down and blog til my heart's content.
Continuing on in the saga of my temporary veganism, Day 4 & 5 were a different sort of challenge....more for my friend than for me. On Day 4 & 5 I went on a road trip to a small town in Saskatchewan called Rosthern to visit a dear friend of mine named Jill. About one week before my trip, I phoned her up to 'warn' her about my vegan diet and after saying some choice words about this diet choice, she was very supportive.
To fuel up for my road trip I started the day with Angela's Vegan Apple Pie Oatmeal.
This variation on oatmeal is the first that I have ever enjoyed as I usually do not like oatmeal at all. This version was so good I may even make it again.
Then I hit the road.
I got to Rosthern in the afternoon, and immediately Jill showed me the Vegan Granola Bars she made for us.
They were so so good. After travelling for 3 hours I needed some nourishment and this was perfect. Here is the recipe Jill used:
Vegan Granola Bars
2c. Old Fashioned Rolled Oats
1.5c. Rice Krispies
1/4c. vanilla protein powder or ground flax
1/2c. organic cranberries
1/4c. toasted walnuts and toasted almond slivers
1c. organic peanut butter (or regular if you don't have organic)
3/4c. unpasturized honey (or pure maple syrup)
1/3c. brown sugar
1 tsp vanilla
Bring peanut butter, honey, brown sugar and vanilla to a soft boil and then stir in dry ingredients. Press into greased 9x13 pan and cool before cutting.
For supper Jill prepared a vegan teriyaki stir fry, and introduced me to these babies:
They are gluten free and wheat free, and went really well with the veggies.
After supper we travelled to Martinsville where we attended a power yoga class at the home studio of her friend Rochelle. Rochelle has an adorable studio in Martensville.
Rochelle runs a business called Glo Fitness and she offers personal training and lots of awesome classes. If you live in or near the Martinsville area I highly recommend checking out a class!
For a post workout snack when we got home, we made homemade guacamole which we ate with Mary's Organic Vegan Crackers.
The next day, Jill and I made Jolene's Vegan Pancakes.
Here's what you need:
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 T baking powder
pinch of salt
1/4 cup brown sugar
1 T canola oil
1 cup unsweetened Almond Breeze
1 tsp vanilla extract
Mix dry ingredients together.
In a separate bowl mix the wet ingredients.
Add wet to dry and stir (don't over mix).
Cook on a sprayed grill flipping when little bubbles appear on the surface.
Top these with blueberries and pure organic maple syrup and you've got yourself a delicious vegan breakfast.
I thought that trying a vegan diet while at a friend's house would be hard but Jill made it sooo easy. We had delicious, healthy, vegan food and never once did I feel deprived because we ate such yummy food, and Jill ate the same things I did!
So far, there have been a few challenges, but Day 3 & 4 were much easier than Day 1, 2 & 3.
