Cookie Time

Over the weekend, I was given a recipe by a friend of mine for Rochelle's Craving Killing Cookies.

For this recipe you will need:

1 large egg
1.5c. natural peanut butter (or regular is fine)
1.5 scoops vanilla, chocolate, or unflavoured whey protein powder.
0.5 c. sucanat (or another natural sweetner)
0.5c. almond meal (this is just almonds blended into crumbs in a blender)
1 tsp. baking soda
0.5 tsp. vanilla extract

Preheat the oven to 350

In a large bowl, lightly beat egg.

Add the remaining ingredients and mix well.

This is the protein powder that I use. I got it at the Bulk Barn and I like it because it is organic, lactose free, and very low in sugar.

This natural sweetner (below) was gifted to me from a friend of mine. I used it instead of sucanat and I think it worked well.

Once you mix all the ingredients together, form little balls with a spoon or your hands and place on lightly greased or lined baking sheet.

I ended up splitting the dough in half and adding these babies to half of the dough.

The chocolate-y cookies turned out great.

I'm not sure if these cookies really kill my cravings for junk food....the cookies with the dark chocolate chips are better for me than the other kind. Possibly because the other batch is burned.

I blame my extra-hot oven. And my tiny little attention span.

Does anyone else get distracted easily in the kitchen or is that just me?

  1. I never get distracted in the kitchen or when I am cooking ... but I get distracted at all other times and in all other places.

I don't think I could ever do an hour of spin-class! Good for you for making it through!!!!

  2. In regard to your comments on my blog ...

Barf - I know, cold soup would be disgusting!

And, on the fish there is lemon, oregano, salt, pepper, smoked paprika and parsley.
